About San Michele

Ours is the story of Cremonesi family who, for more than 40 years, have believed in the value of waiting.  Because it's only with patience and a light touch that wonderful things happen.

Winter, spring, summer and autumn.  For most people, they're the four seasons.  For us, they're the start of a story: Our story.  Because every ham we produce follows a natural cycle of four seasons, just as in the days of our ancestors.

When the exact blend of salt was a great secret, handed down from father to son.  When the hams dried looking up at the sky, aided by the sea breeze.  Today we follow these valuable teachings in our factory, where people assist technology, not the other way round.

Close your eyes and imagine a long corridor of hams, seemingly endless, made of scents and flavors, suspended in time... that is our home.

"Enjoy the slow pace, and open the windows", we were taught from an early age.  "Only like this will the hams become fragrant and mild".  It sounded like magic to us, but we've never forgotten it and, today as in the past, we strive to continue this spell, creating a food that's not only Prosciutto, but also Culture, History, Tradition and Passion.
