Strip Steak goes by many names-Delmonico, New York strip, club steak-and it is one of the most popular of all beef cuts. Ours are hand-carved from Certified Black Angus Beef raised in the Midwest, which makes them a "cut" above the others. The strip is a firm-textured, well-marbled piece of meat: tender, juicy and flavorful without being too fatty. It comes from the short loin: the most prized part of any steer. It's actually the boneless top loin muscle, a porterhouse minus the tenderloin and the bone.
